Ingredients

To make Arhar Dal with Lauki, you will need the following ingredients:

  • 2 cup Arhar Dal (Split Pigeon Peas)
  • 2 Bay Leaves
  • 1 tsp Cumin Seeds (jeera)
  • 2 Dry Red Chilies
  • 1 tsp Turmeric Powder
  • 1 Tomato (chopped)
  • 2 Green Chilies (slit)
  • 2 tbsp Oil or ghee
  • Salt (to taste)
  • Coriander Leaves (Dhania Patta) for garnishing
  • 1 Lauki (Bottle Gourd) peeled and chopped

Instructions

Preparing the Dal

  1. Rinse 2 cups of Arhar Dal with water.
  2. Soak the dal in water for 30 minutes.
  3. Drain the water and keep the dal aside.

 

Cooking dal in kadai or cooker

  1. In kadai, add the soaked dal and 4 cups of water.
  2. Boil it until the dal is fully cooked.
  3. it will take at least 20 minutes to cook.

Use a big spoon to mash the dal properly.

Add water as per your preference to adjust the consistency of the dal, Add 3 chopped green chilies, 1 teaspoon of turmeric powder

       Add 2 cup chopped Lauki

Cook until the Lauki is soft.

In a separate pan, heat oil and add 2 bay leaves, 2 dry chilies, and 1 teaspoon cumin seeds.
stir them well.

Add 2 chopped tomatoes to the pan and cook until the tomatoes are soft.

Add the cooked dal to the kadai.
Add salt to taste and let it cook for 5 more minutes.

Turn off the heat. serve Arhar dal with lauki with rice or roti.

Cooking the Dal in a Pressure Cooker

  1. Heat 2 tbsp of oil in a pressure cooker.
  2. Add 2 bay leaves, 1 tsp cumin seeds, and 2 dry red chilies to the hot oil.
  3. Once the spices start to sizzle, add turmeric
  4. Add 1 chopped tomato and 2 slit green chilies to the cooker.
  5. Cook for 2-3 minutes until the tomato turns soft.
  6. Add the soaked Arhar Dal to the cooker.
  7. Add 3 cups of water and salt to taste.
  8. Stir well and close the pressure cooker with a lid.
  9. Cook on high flame for 4-5 whistles or until the dal is soft and fully cooked.
  10. Turn off the heat and let the pressure release naturally.

Adding the Lauki

  1. Once the pressure is released, open the cooker lid.
  2. Add the chopped Lauki to the dal and mix well.
  3. Close the lid and cook on a medium flame for another 2 whistles or until the Lauki is cooked.
  4. Turn off the heat and let the pressure release naturally.
  5. Garnish with coriander leaves.

Your Arhar Dal with Lauki is now ready to be served hot with rice or roti.
