Recipe Ingredients:
- 1 kg lauki[bottle gourd]
- pach phoran[geera,sarso,methi,fenel,kalongi.hing]
- b1 bry chilli
- 1 teaspoon roasted atta[wheat flour]
- 1 teaspoon roasted Besan[gram flor]
- 1/2 teaspoon Garam Masala
- 3 Green Chilli
- 1 teaspoon haldi[Turmeric powder]
- 2 tablespoon Oil
- salt to taste
Recipe Instructions:
1. Prepare the Lauki:
- First, wash and peel the Lauki (Bottle gourd) and cut it into small pieces. Remove any seeds or pith from the Lauki. If there are any hard seeds, remove them carefully.
2.Soak The Red Chana:
- Soak the Red Chana (Chickpeas) in water overnight. Drain the water and rinse the Chana thoroughly.
3.Prepare The Masalas and Channa:
- In a pan, heat the Oil on medium heat. Add the Pach Phoran Masalas and Dry Chilli and let them sizzle for a few secondsAdd soak Red chana,fry for 1 minutes
4.Add Luaki:
- Add the Lauki to the pan and mix well with the masalas and chana ,green chilli Add a 1 teaspoon of Haldi (Turmeric Powder) and Salt to taste. Stir well and cover the pan. Let it cook on medium to low heat for about 10 minutes.
5.Check The Lauki:
- After 10 minutes, check the Lauki to see if it is cooked. You can poke it with a fork to see if it is tender. If it is not cooked yet, cover the pan again and let it cook for a few more minutes.
6.Add Flours:
- After 5-7 minutes, add the roasted Atta (Whole Wheat Flour) and Besan (Gram Flour) to the pan. Mix well and let it cook for another 2-3 minutes. The flours will thicken the gravy and give it a nice flavor.
7.Add Garam masalas:
- Finally, add the Garam Masala to the pan and mix well. Cook for another minute or so and then turn off the heat.
8.Garnish and Serve:
- Garnish the Lauki Chana Sabji with chopped coriander leaves and serve hot with Roti or Rice.

Step-by-Step Process
