  • 1 medium-sized bottle gourd (lauki/dudhi)
  • 1 dry red chili,dalchini 2 pic
  • 1 tsp of mixed spices (kalonji, sarso seed, methi seed, fennel seeds, randhuni, and cumin seeds{ all masala mix together called {pach phoran}
  • 2 tbsp of oil
  • 1/4 tsp of turmeric powder
  • 1/4 tsp of cumin powder
  • 1/4 tsp of coriander powder
  • 1/4 tsp of red chili powder, 1/2 teaspoon fennel seeds paste
  • 1/4 tsp of ginger paste
  • Salt to taste


  • Peel the bottle gourd and cut it into small pieces.

  • Heat oil in a pan and add the mixed spices and dry red chili.
  • Fry for a few seconds until they start to splutter.

Add the bottle of gourd pieces, turmeric powder, cumin powder, coriander powder, and red chili powder, ginger paste, salt Mix well and fry for 2-3 minutes.

Cover the pan and let it cook on low heat for 10-15 minutes or until the bottle gourd is cooked properly.

  • Stir occasionally and check if the bottle gourd is cooked.
  • If it is not cooked properly, cook for a few more minutes.
  • add 1 teaspoon of fennel seed paste and mix well

  • Once the bottle gourd is cooked and waterdries up, turn off the heat

LAUKI KI SABZI, serve hot with roti or rice.
