  • 1 medium-sized tomato
  • 5 garlic cloves
  • 1/2 teaspoon amchur powder (dried mango powder)
  • 1/3 teaspoon red chili powder
  • Fresh coriander leaves
  • 1/4 teaspoon mustard seeds

Preparation Steps:

Step 1: Washing and Drying the Bhindi

Start by washing the bhindi thoroughly and patting it dry with a towel.

Then, cut the bhindi into pieces and set it aside.

Step 2: Making the Achari Masala

Prepare the achari masala by grinding together 1/3 teaspoon fenugreek seeds and carom seeds, 1 teaspoon cumin seeds, 2 teaspoons mustard seeds, 6 black pepper, and 2 dry chili)

Grind them into a rough powder and set aside.

Step 3: Cooking the Bhindi

Heat a pan and add pach poran along with dry chilies.

Add the cut bhindi along with turmeric powder and fry until it’s fully cooked,

This may take about 10 to 15 minutes on medium to low heat.

once cooked add salt according to taste,

stir well.

In another pan, heat mustard oil or any other cooking oil.

Add 1/4 teaspoon mustard seeds and 5 crushed garlic, and stir well for a minute.

Stir well and add 1/2 teaspoon red chili powder, 1 teaspoon amchur powder, 1 and 1/2 teaspoon mixed achari powder, and chopped coriander leaves.

Stir for a few seconds.

Now, add the cooked bhindi to the masala gravy and stir well for 2 minutes on medium heat.
