  • 1 teaspoon red chilli powder
  • 1/3 teaspoon garam masala powder
  • 3 teaspoons ginger-garlic paste
  • Fresh coriander leaves dhaniya for garnishing

  • Mustard oil
  • Salt to taste

    • Peel the boiled eggs and fry them in mustard oil until the egg covers turn golden brown. Set them aside.
    • Peel the boiled potatoes and cut them into bite-sized pieces.

    Step 2: Preparing the Curry

    • Heat mustard oil in a pan.
    • Add bay leaves, dried red chillies, and raw cumin seeds (jeera). Let them sizzle.
    • Add the onion paste and saute until the onions release aroma and turn golden brown.
    • Add ginger-garlic paste and cook for a minute until the raw smell dissipates.
    • add chopped tomatoes and green chillies. Cook for a few minutes until the tomatoes soften.
    • Add red chilli powder, cumin powder, turmeric powder, and salt. Stir well for about a minute.
    • Pour in water as required and bring the mixture to a boil.
    • Add the fried eggs and cut boiled potatoes to the boiling mixture.
    • Allow the curry to boil for approximately 7 minutes until the gravy thickens and takes on a reddish-yellow hue.
    • Sprinkle garam masala powder and stir gently.
