- Mustard Oil

Step-by-Step Recipe
Preparation:
- Peel the drumsticks and cut them into finger-sized pieces.
- Peel the potatoes and cut them into square pieces, then wash them thoroughly.
Pressure Cooking:
- In a pressure cooker, add the drumsticks and potatoes, and cook for one whistle only. Note: Overcooking will make the drumsticks mushy.
Tomato Paste:
- Grind the tomatoes, ginger, and 2 dry chilies into a fine paste.
Cooking the Masala:
- Heat mustard oil in a pan. Add 1 dry chili and cumin seeds; sauté until they splutter.
- Add the tomato paste and stir. Now add turmeric powder, red chili powder, cumin powder, and garam masala powder. Cook the masala for about 10 minutes or until oil separates.
Combining:
- Add the pressure-cooked drumsticks and potatoes along with the water from the cooker. Stir well and cook for another 5 minutes.
Final Touch:
- Garnish with fresh coriander leaves and serve hot!
