- 2 parwal chopped
- 1 onion chopped
- 2-3 green chilies chopped
- 2-3 tablespoons mustard oil or any oil of your choice
- 1 dry red chili
- 1 pinch asafoetida hing
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1/3 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish

Step-by-Step Method
Prepare Vegetables:
- Wash and chop all vegetables into equal-sized pieces.
Heat Oil:
- Heat mustard oil in a pan. Once hot, add dry red chili, cumin seeds, asafoetida, and green chilies.
Saute Onions:
- Add chopped onions and saute until they turn light pink.
Add Spices:
- Mix in ginger-garlic paste and cook for a few seconds. Then, add tomato, turmeric, red chili powder, coriander powder, cumin powder, and garam masala. Cook the spices well. add salt
- cook until the oil separates from the masala.
Cook Vegetables:
- Add all the chopped vegetables to the pan. Mix well and cook on medium heat for 1-2 minutes.
Cover and Cook:
- Cover the pan with a lid and let the vegetables cook on low heat for 10-12 minutes. Stir occasionally to prevent sticking.
Garnish and Serve:
- Once the vegetables are fully cooked, garnish with fresh coriander leaves. Serve hot with roti or rice.
