Preparation Steps
Step 1: Cut the Eggplant
- Wash the eggplants and cut them into slices, as shown in the image below.
- Heat oil in a pan and fry the eggplant slices until they turn golden brown.
Step 2: Prepare the Masala
- In same pan, heat oil and add dry chilli and cumin seeds.
- Once the cumin seeds start to crackle, add finely chopped onion and saute until they turn golden brown.
- Add ginger garlic paste and saute for another minute.add haldi and red chilli powder.Mix well and cook for 2-3 minutes on high to medium heat.
Add tomato
add all dry spices – pinch of jeera powder, coriander powder, garam masala, and salt.
Mix everything well and cook for 2-3 minutes on low heat{do not add too much of masalas it will taste bitter]
Step 3: Mix the Eggplant and Masala
- Add the fried eggplant slices to the masala and mix well for 2 minutes
Add 1 cup water n mix well
Cover with a lid and let it cook for 10 minutes at low heat
Add dhaniya n mix well.Your delicious Baingan Masala is now ready to be served.
