Pro Tips for Making the Perfect Gobi Masala

Blanch the Cauliflower: Boil the cauliflower with a little salt and turmeric before marinating.

This makes it softer and removes any raw smell.

Coat with Spices and Gram Flour: Mix the blanched cauliflower well with gram flour (besan) and spices.

This helps the flavors stick better and adds a slight crunch when you fry it.

Use Mustard Oil for Flavor: Mustard oil gives an authentic taste, but you can use any cooking oil you like.

Just make sure the oil is hot before you start cooking.

Fry in Batches if Needed: If you have a lot of cauliflower, fry it in small batches so each piece gets crispy and golden.

Overcrowding can make it soft.

Wait for Oil to Separate from Masala: Cook the tomato and spice mix until you see oil separating from it.

This shows the spices are well-cooked, making the dish tastier.

Adjust Spices to Your Liking: Gobi Masala can be mild or spicy. Reduce red chili and green chilies if you want it less spicy, or add a pinch of sugar for a milder taste.

Add Only a Little Water: Gobi Masala is usually thick, not watery.

Just add a bit of water to keep it moist, but avoid too much.

Add Fresh Coriander on Top: Garnish with chopped coriander leaves at the end for extra freshness and flavor.

Serve Hot: Gobi Masala is best served hot to keep the cauliflower crisp and flavors strong.

Enjoy it with roti, naan, or rice for a tasty meal.

Notes

If you’re short on time, you can skip frying the cauliflower.

Just add it directly to the masala after blanching.

Adding gram flour to the marinade helps the spices adhere better to the cauliflower and adds a light, nutty flavor.
