Gobi Masala is a popular Indian dish made with cauliflower (gobi) and a medley of spices.
It’s cooked in a tangy, slightly spicy gravy that enhances the flavor of the vegetable.
Cauliflower is often marinated with spices, lightly fried, and then simmered in a tomato-based gravy until tender.
This dish is commonly served with Indian bread or rice, making it a versatile option for any meal.
Ingredients list for Gobi Masala
For Gobi Mariantion
- 1 medium cauliflower, cut into florets
- 1/3 teaspoon turmeric powder
- Salt, to taste
- 1/3 teaspoon Kashmiri red chili powder
- 1/3 teaspoon coriander powder
- 1/3 teaspoon cumin powder
- 1/4 teaspoon garam masala powder
- 2 teaspoons gram flour (besan)
Gobi Masala Recipe
- Mustard oil (or any cooking oil), for frying
- 1 bay leaf
- 1 dried red chili
- 1/3 teaspoon cumin seeds
- 2 tomatoes, chopped
- 4 green chilies, chopped
- 1/3 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon garam masala powder
- salt
- Fresh coriander leaves, for garnish
Step-by-Step Instructions
Step 1: Prepare the Cauliflower
Cut the cauliflower into medium-sized florets.
Wash them thoroughly and add to a pot of water.
Add 1/3 teaspoon turmeric powder and a pinch of salt.
Bring the water to a boil, then drain and set aside the cauliflower.
Step 2: Marinate the Cauliflower
In a bowl, add the boiled cauliflower.
Sprinkle 1/3 teaspoon turmeric powder, 1/3 teaspoon Kashmiri red chili powder, 1/3 teaspoon coriander powder, 1/3 teaspoon cumin powder, 1/4 teaspoon garam masala powder, and 2 teaspoons gram flour (besan).
Mix well until the cauliflower florets are evenly coated.
Step 3: Fry the Cauliflower
Heat mustard oil in a kadai (you can use any cooking oil).
Once hot, add the marinated cauliflower and fry until golden brown.
Remove and set aside.
Step 4: Prepare the Masala Gravy
In the same oil, add 1 bay leaf, 1 dried red chili, and 1/3 teaspoon cumin seeds.
Let them splutter.
Add the chopped tomatoes and green chilies.
Add 1/3 teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, and 1/2 teaspoon red chili powder and 1/4 teaspoon garam masala powder.
Cook on medium heat until the oil separates from the masala.
Step 5: Combine and Cook
Add the fried cauliflower ( gobi) to the masala mixture.
Stir well to coat the cauliflower in the masala.
Add 1/2 teacup of water, stir, and cover with a lid.
Let it cook on low heat for 5-6 minutes.
Step 6: Final Touch
Remove the lid, give it a final stir, and garnish with chopped fresh coriander.
Serve hot with roti, naan, or rice.
