– Wash the potatoes thoroughly and boil them until they are cooked. – Once boiled, peel off the potato skins, set them aside, and chop them into medium-sized pieces. – Chop the onion, garlic cloves, tomatoes, green chillies, and coriander leaves.
– Heat a pan and add oil to it. Once the oil is hot, add the dry chilli and raw cumin seeds (geera) and let them sizzle.
– Add the chopped onions to the pan and fry them until they turn golden brown.
– Next, add the chopped garlic cloves and green chillies to the pan and saute them for a minute.
– Add the tomatoes, haldi (turmeric), cumin powder, and garam masala powder to the pan. Mix well and cook for a few minutes until the tomatoes become soft.
– Now, it’s time to add the boiled and mashed potatoes to the pan,add salt, Stir well to combine all the ingredients and cook for 2 to 3 minutes on high heat.
– Finally, add the chopped coriander leaves (dhaniya) to the curry, stir well, and remove from heat.
