Lauki ki Sabji with Moong Dal: A Healthy and Delicious Indian Dish

– Wash moong dal and drain the water,pet dry and set aside

– Heat 1 tablespoon of oil in a pan and add moong dal. Fry the dal until it turns golden brown.

– Add 1/2 cup of water to the dal and mix well. let the dal cook on medium heat until it is half done.

– Once the dal is half cooked, add the grate lauki to the pan. Add turmeric powder and green chilies , Mix well and cover the pan.

Cook the lauki and dal on medium to low heat for 10 minutes. Keep checking and stirring occasionally to make sure it doesn’t stick to the bottom of the pan

– Cook the lauki until it releases its water, then strain the water and set it aside.

– In a separate pan, heat 2 tablespoon of oil. Add bay leaf, dry chili, cumin seeds, and 1 elaichi. Fry the spices for a few seconds until fragrant.

– Add cooked lauki with dal to the pan ,add salt,add 1 green chilli . Mix well and let it cook on high heat for a few more minutes.

– Add 1/4 teaspoon ginger paste,1/2 teaspoon cumin seed powder, Mix well and let it cook for a 5 to 7 minutes until the sabji is dry and the lauki is soft.

– cook untill the sabji is dry,add pinch of sugar for balance the taste

add fenel seeds powder or paste,mix well

serve hot with rice or roti.
